Masters of Food & Wine
Celebrate a bountiful harvest with Park Hyatt Aviara on Sunday, September 27. For this quarter the Masters of Food & Wine will highlight biodynamics — the spiritual, ethical and ecological approach to agriculture, gardens, food production and nutrition. Join Chef Kurtis Habecker in the Palm Courtyard from 6:30 p.m. – 9:00 p.m. for an informative evening featuring authentic and exquisite food & wine pairings.

Enjoy 2011 Domaine Carneros Brut and tray-passed hors d’oeuvres while learning about biodynamic farming from our guest speakers: Nicole Gilberts from Domaine Carneros winery; Theodore Carlat, Fallbrook grower and author of Organically Grown Food: A Consumer’s Guide; and Helene Beck, Fallbrook organic citrus grower and author of Jewels from My Grove.
Dinner – 7:00 PM
Your biodynamic dining experience starts at our Farmer’s Market Station with lettuce, endive and arugula, citrus segments, persimmons, and avocado dressings. Savory flavored yogurts, organic chicken liver mousse with fig chutney, roasted hazelnuts, house made cornichons and grilled country gingerbread round out the first course. Choose from an assortment of organic naturally leavened and whole grain breads at the Prager Brothers Artisan Bread Station before visiting the Rotisserie Station for kaffir lime chimichuri, wood oven roasted biodynamic vegetables with fiscalini-oregano bread crumbs, or wood fire oven roasted local catch with Meyer lemon, pepper caponata and parsley. The final stop on this extraordinary culinary experience will be the Zenbunni Biodynamic Chocolate Station. Pairings of Pinot Noir and Rosé accompany your meal throughout.
